In the Madeira Island Carnival season, “dreams and malassadas” are traditionally eaten with sugar cane honey or with sugar. In Madeira, there can be no carnival without “dreams and malassadas”! Here we present you one of the many existing recipes to sweeten your Carnival!

1 cup of water
1 cup of flour
Rasp of 1 lemon
2 tablespoons baking powder
1 pinch of salt
The water boils with the lemon zest and the pinch of salt.
As soon as it boils off the stove, add the flour and beat hard.
Add the whole eggs. Bake in hot oil at tablespoons.
Arrange on a platter and water with cane honey.
