Corn baked is a traditional madeiran dish which must be accompanied with fish or meat. The corn can be cooked or fried on cubes.
1 Kg. of white corn
3 liters of water
1 soup spoon of lard
1/2 chooped cabbage
1 “hand” of tender beans
1 branch of savory
The water goes to the fire with the lard, salt and the savory.
Add the chooped cabbage and half the corn, in the warm water.
Always stir with the wooden spoon, until the water boil, for not to incarnate.
Lie down on plates, depending whether to eat hot or cold.
