Here is the recipe of the famous Madeira Honey Cookies, a delicacy typical of the Xmas season in Madeira..
1 kg Flour
250g Lard (melted pork fat)
2 teaspoons baking powder
5 spoon (soup) Classic or organic Ribeiro Sêco honey (Madeira sugar-cane honey)
Cinnamon powder q.s.
Moscow nut powder q.s.
Mix the dry ingredients, add the spices and lemon zest. Melt the pork fat and add to the previous preparation.
Add the eggs and the sugar cane and stir very well until a homogeneous mass is obtained and that takes off from the bottom of the cup.
Mold small balls (the size of a small walnut) and arrange on the board with some space between them (at the end the dough will go down in the oven and look like small wafers).
Bake in preheated oven until golden brown and refrigerated in hermetically sealed jars.
